Blanching is an important processing stage for a number of reasons: primarily it inactivates enzymes that cause deterioration in colour and flavour during drying and subsequent storage of some fruit and vegetables. In addition it improves the texture of the food and assists the preservation of vitamins. Blanching may be carried out using water or steam.

Lye peeling offers an effective way of peeling some fruits and vegetables. The food is placed in a hot solution (at or near boiling point) of sodium hydroxide for a specified time which varies, depending on the fruit or vegetable to be peeled. The loosened skin is removed by jets of water. Care is needed, as hot lye is very dangerous, and corrosive to some metal equipment.
Lye peeling is often combined with blanching in one complete operation.

Perishable foods which are to be stabilized for extended storage must be sterilized to retain desirable quality factors (flavour, colour, aroma, etc.); to destroy enzymic activity; and most importantly to kill micro-organisms such as Clostridium botulinum which produce deadly toxins, and others which cause undesirable changes in the food quality. Of the different sterilization processes, canning is perhaps the most widely used. The process involves filling the food into a can, fitting the lid using a double seam and heating the can in a retort to sterilize the food. Different retort temperatures and processing times (derived from several complex equations and calculations) are used depending on the type of micro-organisms to be destroyed. Commercially, canning is carried out as either a 'batch' or 'continuous' process. For canning on a small scale, a batch system using retorts or pressure cookers is more appropriate.
Although canning is possible at a small scale, it is not a technology that is recommended, owing to several constraints. For example, the equipment, material and operating costs are high. As well as the retort and canning equipment, the process requires other equipment such as a steam generator and an air compressor. In addition, canning requires experienced workers to operate the equipment; maintenance engineers to service the equipment and microbiologists for examination of the products (thus also requiring access to microbiology media and equipment). It is a technology that should only be undertaken by experienced processors, especially if low acid foods such as fish, vegetables or meats are to be canned.

Dairy centrifuges are used to separate the cream from liquid milk, by the application of centrifugal force. The simplest type of equipment is the tubular bowl centrifuge, comprising a vertical cylinder or bowl which rotates inside a stationary casing at between 1500rpm and 5000rpm depending on the diameter. The milk is introduced continuously at the base of the bowl and the two liquids (cream and skimmed milk) are separated into layers which emerge from the two outlets. 07.2 Honey centrifuges
Honey centrifuges operate by forcing honey out of the combs by centrifugal force. The extractor comprises a cylindrical container with a centrally-mounted fitting to support combs or frames of uncapped honey. There is also a mechanism to spin the frames which throws the honey out of the uncapped combs to the inner wall of the bowl. The honey then collects in the bottom of the bowl. A honey gate allows the honey to be drained out when required. Electrically operated high speed extractors increase the speed gradually to prevent damage to the combs.

FILTER CENTRIFUGES
This can be made by taking a stainless steel drum with perforated holes (the drum of an old washing machine is perfect) and attaching it to a central shaft.
The shaft is made to rotate through the use of a toothed cogs and a flywheel.
The drum is encased in an outer container. This can be made from any material but if the filtrate is to be collected, the container must be made from food grade plastic or a similar material. At the top of the outer container there is an inlet feed chute for pouring the liquid and at the base there is a collecting chute.
MODE OF OPERATION
The liquid is fed in at the top through the inlet chute. Simultaneously, the handle is turned and the drum is made to rotate. This rotation causes the material to be thrown against the drum wall and the filtrate drains out through the perforated holes and is finally collected at the base. If necessary the drum can be lined with a filter cloth.

Refining and conching are two important steps in the manufacture of chocolate. Refining involves the crushing and shearing of cocoa and sugar particles to produce a product with the desired particle size. Chocolate for the UK or USA markets should be refined to an average particle size of between 20m m and 30m m, whereas European tastes demand a lower size range of 15pm to 22m m, which gives a smoother product.
Conching is used to develop flavour and to remove undesirable volatile components (e.g. acetic acid), produced during the fermentation of the cocoa beans. The duration of conching is an important factor because most of the flavour changes occur within the first 24 hours. Likewise the temperature at which conching takes place is important, in order to achieve the desired taste/texture. For example, milk chocolate should be conched at 45° to 60°C, whereas plain chocolate should be conched at 55° to 85°C for British taste and up to 100°C for European tastes.
Generally the refining/conching process is as follows. Cocoa powder, icing sugar and the required fats are placed in the feed hopper of the unit. Heating and blending takes place and air is drawn through the mixture. The mix is circulated through a unit in which rotating cylinders press against spring loaded grinding bars to achieve the required particle size reduction. The chocolate mass is then held at the required temperature for a predetermined time to conche it. It should be noted that high quality chocolate production is difficult to achieve technically (requiring experience and expertise) and that the equipment is generally expensive. However, re-melting commercial chocolate for coating/re-using is a viable small-scale industry in many countries.

14.2 Grain cleaners
Grain cleaners are designed for use after winnowing primarily to separate all chaff, straw, weed seeds, broken and inferior seeds, dust, and other contaminants.
Cleaning and grading the grain makes it more suitable for a number of uses: grain required for seed purposes should be clean and uniform; better prices can be obtained for graded samples; and removal of insects and other foreign matter during cleaning ensures better and safer storage. In addition, pre-cleaned grain improves the efficiency of the drying machine, during the drying process, and results in a more uniformly-dried sample. 23.1 Solar dryers
Drying foods in the sun is probably the oldest method of food preservation. At the simplest level, the food is spread on the ground or on mats, and the moisture at or near the surface of the food is heated and vaporized by heat from the sun and ambient air. However, there are a number of disadvantages with sun drying. These include: the intermittent nature of solar energy throughout the day and different times of the year; the possible contamination of the food material by dirt, or insects; exposure to the elements (such as rain and wind), causing spoilage and losses; and the exposure of the crops to rats, chickens and other pests.
Most solar dryers incorporate a platform, raised above the ground, and often some kind of covering to combat the problems mentioned above. The purchase of a solar dryer may require a high capital investment initially, but it is argued that the gains from producing a higher-quality product will quickly offset these costs. A careful assessment of the requirements of the producer is therefore necessary to establish whether higher income can be obtained from better quality products. Solar dryers may be more suitable if processing high value foods rather than low-value staple crops. In addition, the introduction of combination solar/fuel fired dryers may be a desirable option to overcome the problems of intermittent sunshine that often adversely affects solar drying.
SOLAR FOOD AND CROP DRYER
This dryer is not commercially available. Two wooden boxes are made, one to fit inside the other. The inner box should have a 6cm gap all the way around for holding insulation. A few trays, with mesh bases are required to hold the material for drying, and ventilation holes are required all around the sides of the box. This dryer has proved successful in drying many products, particularly the higher value foods such as fruit and herbs.
It consists of sixteen trays, each measuring 3ft by 4ft. The capacity of the dryer varies according to the product being dried, but as an example, it will dry 300-400kg of herbs (net weight) per day.
The heat source can be powered by diesel, gas or electric. The dryer requires 1200 cubic feet of hot air per minute.
Work is continuing on the dryer in an effort to reduce the cost of the forced hot air system.
